In 2019, he founded Raya Bakery, known for chunky cookies and layer cakes, in the heart of Melbourne. He co-owns bingsu and matcha dessert cafe Nimbo, and will open Scandinasian bakery Dua in early 2025. His cake artistry blends cultural heritage with a modern twist. He was an early Instagram adopter and has 221k followers, with supporters around the world and an enviable media clippings folder, with press in Vogue, Cosmopolitan, Buzzfeed and CNN.\n \nAudrey Payne is a contributing editor to Cherry Bombe, a Brooklyn-based indie media company celebrating women and cool creatives in the world of food and drink, and the Melbourne food and drink editor for Broadsheet, Australia's number one cultural guide.
